Baked Summer Squash

Baked summer squash from a Southern California garden center.

Ingredients:

  • 6 yellow squash
  • 3/4 cup ricotta cheese
  • 4 green chopped onions
  • 1/2 tsp parsley
  • 1/2 tsp rubbed sage
  • 1/2 tsp thyme leaves

Preparation:

  1. Preheat oven to 375 degrees.
  2. Remove and discard stem ends of the squash.
  3. Slice the squash lengthwise, scoop out seeds and place the halves side-by-side on a baking sheet.
  4. Combine remaining ingredients in a mixing bowl.
  5. Fill the hollows in a squash evenly.
  6. Bake 15-20 minutes or until squash is tender.
  7. Serve immediately.

Yield:
6 servings
